California Adventure: Big Sur


We started our adventure with a drive up to Big Sur with a half way stop in Paso Robles. There, we visited the farmer’s market set up in a community park. Naturally, while we picked up some veggies and fresh berries, Big Spike ran to the swings followed by the slide and topped off the afternoon with a jolly roll in the sand pit. Classic Big Spike. Carne asada with a tomato and cucumber salad

This recipe was prompted after we tried some disappointing pre-marinated meat from a Mexican Meat Market. It had such promise but alas, it was no good.

Carne asada:
3.5 lbs flap or skirt steak
1 bunch cilantro, chopped
1/4 c orange juice
1/4 c olive oil
1/4 c fresh lime juice
1 tsp cumin
1 TBS garlic paste
1 TBS salt
1 TBS pepper
2 serrano chilies, diced

Mix all of the marinade ingredients (except meat) in a small bowl. In a Ziploc bag, add the meat and marinade. Refrigerate for 5 hours. Remove 30 minutes before grilling.  Then, grill to your liking!

Tomato and cucumber salad:
4 Roma tomatoes,  diced
1 English cucumber,  diced
1 pint radishes, tops removed and sliced thinly
1/2 small red onion, sliced thinly
2 TBS red wine vinegar
2 tsp garlic paste
1 sprig fresh rosemary, diced
3 sprigs fresh thyme, diced
Salt and pepper to taste

Combine all ingredients.  And eat!
